Access the Resource Guide - Resource option.
You will need to insert three columns, they are:
Available from
available for
Max Units
With this information you can set the start date and end date of your holiday, the units should be with 0% indicating that you will be unavailable during this period.

Holidays
Hi,
The solution from Hezequias didn't work for me but I found another way.
- Go to the Resources tab > Click the Resources button on the toolbar
- Select the Resource you want to add holiday for.
- Click on the Calendar button on the toolbar
- In the calendar, select the day when the resource is on holiday, then select the "Non-Working time" radio button.
- Repeat for all days that the resource is on holiday.
- Hit the <OK> button and Save the pod file.
- Go back to the Gannt view and you'll probably notice the holidays have not been applied and the dates are still the same.
- Restart Project Libre and open the pod file again.
- The Holidays should now have been applied and your project dates changed to reflect them.
